Vegan Chinese Almond Cookies


It’s that time of the year. The perfect time to indulge in festive treats this upcoming Chinese New Year!

Chinese Almond cookies are one of the must-try CNY festive cookies. Why not try baking your own festive treat for your family, relatives and friends to wish them good fortune in the brand new year? Try this fibre-rich and lower sugar version of bite-sized almond cookies; they will surely love it!

Preparation Time: 20 minutes
Cooking Time:  12-15 minutes
Yield:  20 pieces

Dry Ingredients
• 110g Etblisse Almond Powder

• 70gwhole wheat flour
• 70g cake flour
• 50g Biogreen Enrich Oatmilk Energy
• 120gcastor sugar
• ½ teaspoon Biogreen 84 Live Fine Sea Salt
• 1 teaspoon baking powder
• 1 teaspoon baking soda 

Wet Ingredient
• 150ml vegetable oil 

Garnish
• 20 pieces whole almonds


Cooking Instructions
1. Preheat oven to 180°C.

2. Line baking tray with parchment paper.
3. Mix all the dry ingredients.
4. Stir in oil and mix until well incorporated.
5. Form cookies dough into ball shape using hands.
6. Line all the cookies dough on baking sheet, press an almond onto the centre of each cookie
7. Bake for 12-15 minutes at 180⁰C.
8. Cool them and enjoy!

干性材料
• 110克Etblisse 美肤润肺杏仁粉

• 70克全麦面粉
• 70克低筋面粉
• 50克 Biogreen Enrich 燕麦奶
• 120克白砂糖
• 半茶匙Biogreen 84 活性幼海盐
• 1茶匙泡打粉
• 1茶匙苏打粉 

湿性材料
• 150毫升植物油 

装饰
• 20 整颗杏仁


烹调方式
1. 将烤箱预热至摄氏180度。

2. 将烘培纸铺在烤盘上。
3. 混合并拌匀所有干性材料于一个中碗里。
4. 拌入油,混合至均匀即可。
5. 用手将面团搓成球形。
6. 将所有所有饼干面团并排在烤盘上,将杏仁轻轻按压在饼干的中心。
7. 把烤盘放入烤箱内,并以摄氏180度烘烤12至15分钟。
8. 放冷后即可享用!
