Tofu Rendang


This tofu rendang is a delicious and speedy Malaysian style dish with golden fried tofu cubes that are crispy on the surface but soft and smooth inside.

Ingredients:-
• 300g firm tofu, cubes
• 3 tablespoons Biogreen 100% Organic Virgin Coconut Oil
• 4 tablespoons Biogreen O’Kid High Protein Organic Soya Milk Powder + 100ml purified water
• 2 tablespoons toasted desiccated coconut
• 1 tablespoon Etblisse Organic Whole Cane Sugar
• 1 teaspoon Biogreen 84 Live Sea Salt (Fine)
• ½ teaspoon black pepper

For the spices
• 6 red chillies
• 20 dried chillies, soaked in hot water for about 30 minutes to soften, and drained
• 4 onions
• 3 shallots
• 6 garlic cloves
• 3 slices of ginger
• 3 stalks lemongrass
• 10g turmeric
• 150ml water  
• 1 tablespoon Biogreen 100% Organic Virgin Coconut Oil

Preparation Method:-
1. Process the spices ingredients in a blender until fine.
2. In a frying pan, heat the coconut oil and fry the tofu cubes, turning half way, until browned on all sides. Set aside.   
3. Add in and fry the spices, stirring frequently for 5 to 10 minutes or until fragrant.
4. Add the soymilk and cane sugar to the pan and bring to a boil, stir constantly.
5. Stir in the tofu cubes, toasted desiccated coconut, season with sea salt and black pepper and continue to cook gently for another 10 mins. Ready to serve.
