Supergreen Agar-Agar Jelly Mooncake

Ingredients:

Agar-agar “Egg yolks”
• 1 small carrot (peeled, cut into cube size)

• 150 ml filtered water
• ¾ teaspoon agar-agar powder
• 30g organic whole cane sugar
• 1/8 teaspoon Biogreen 84 Live Fine Sea Salt 

Soymilk with yolk agar-agar mooncake filling
• 3 tablespoons Biogreen O’Soy Plus Organic Soymilk (Low Cane Sugar) + 350g warm water

• 1 1/4 teaspoons agar-agar powder
• Agar-agar “egg yolks”  

To assemble
• 4 tablespoons Biogreen Supergreen Soymilk + 350g warm water

• 2 teaspoons agar-agar powder
• Soymilk with yolk agar-agar mooncake filling


Preparation Method:

Agar-agar “Egg yolks”
1. Blend the carrot into juice, sieve and set aside.

2. Combine agar-agar powder, salt, sugar and carrot juice in a sauce pot, cook over medium heat until agar-agar powder dissolves completely.
3. Pour mixture into round ice cubes mould and top with the cover.
4. Keep in the freezer to freeze for 15 minutes, or until fully set.
5. When fully set, unmould and rinse with plain water. Set aside. 

Soymilk with yolk agar-agar mooncake filling
1. Combine soymilk and agar-agar powder in a sauce pot, bring to a boil over medium heat, and cook until agar-agar powder dissolves completely.

2. Pour some soymilk agar-agar mooncake filling mixture into moulds.
3. Add in agar-agar “egg yolk”. Add in more soymilk agar-agar mooncake filling mixture until the total weight is 60 g.
4. Let them cool and freeze for 20 minutes, or until fully set. Unmould the agar-agar paste filling when fully set. 

Agar-agar mooncake
1. Combine supergreen soymilk and agar-agar powder in a sauce pot, mix well.

2. Bring to the boil over medium heat, cook until agar-agar powder dissolves completely.
3. Pour some supergreen agar-agar mooncake skin into jelly mooncake mould.
4. Add in soymilk with yolk agar-agar mooncake filling. Pour in supergreen agar-agar mooncake skin until fully filled.
5. Set aside for 15 minutes, or until slightly set.
6. Keep in the freezer and freeze for 25-30 minutes, or until fully set. Unmould the agar-agar jelly mooncakes when fully set. Serve them cold!
