March is not just a month for all women but also pie lovers! 14th of March is celebrated as World ‘Pi’ (π) Day, that’s why we decided to celebrate both of these iconic festive with a Strawberry Vegan Pink Pie!
Preparation time: 25minutes
Chilling time: 2 hours
Yield: 12 mini-sized pie
Ingredients
- Pie crust:
- 1 cup almond
- 2/3 cup cashewnuts
- ½ cup coconut flakes
- ½ cup Biogreen Premium Safawi Dates
- 3 tablespoon of Biogreen 100% Organic Virgin Coconut Oil
- 2 tablespoon of Etblisse Organic Agave Nectar
- 1 teaspoon Biogreen 84 Live Sea Salt
Filling:
- 4 tablespoon Biogreen 100% Organic Virgin Coconut Oil
- 3 tablespoon agave nectar
- 1 teaspoon vanilla extract
- 60g of silken Tofu
- 60ml Biogreen Perfect Pink Lady Oatmilk
Garnish:
- Fresh strawberries
Cooking Instructions
Pie Crust:
- To make the crust, crush all ingredients for crust in a food processor until they are finely ground.
- Divide the mixture evenly among the cups of a 12-cup mini pie pan.
- Before pressing the pie crust to the cups, grease the mould with some coconut oil to prevent sticking.
- Press evenly along bottom and slightly up sides of muffin cups to form each pie’s crust.
- Place in freezer while preparing the filling.
Filling:
- Combine all ingredients for the filling with food processor until well blended.
- Pour the blended mixture evenly into prepared crusts until 80% full.
- Return to freezer and chill for 2 hours.
- After 2 hours, keep pies in refrigerator before serve.
- Garnish the pie top with strawberries.

- 馅饼皮:
- 1杯杏仁
- 2/3杯腰果
- ½杯椰子片
- ½杯Biogreen顶级椰枣

- 1茶匙Biogreen 84 Live海盐
内陷:
- 4 汤匙 Biogreen 100% 有机初榨冷压椰子油
- 3汤匙金龙舌蜜
- 1茶匙香草精
- 60克白豆腐
- 60毫升 Biogreen 完美女人燕麦奶
装饰:
- 新鲜草莓
烹调方式
挞皮:
- 把所有制作挞皮的材料倒入搅拌机中,搅和直到所有的成分被打碎。
- 将混合物均匀地分配在 12 杯迷你挞盘中。
- 将馅饼皮压到杯子上之前,在模具上涂上一些椰子油以防粘连。
- 沿着挞杯的底部和稍微向上的侧面均匀按压,形成每个挞的外皮。
- 待准备内陷材料是,把挞皮置入冷冻库冰冻至定型。
内陷:
- 将所有馅料食材放入搅拌机搅拌均匀直至滑顺。
- 把馅料混合物倒入冷冻定型好的挞皮,并添至8分满。
- 把食材放入冰箱,并冷藏2个小时.
- 2小时后,把馅饼继续放在冰箱里直到准备上桌享用。
- 用草莓装饰挞的顶部。
