Purple Sweet Potato Layered Cake (Kueh Lapis)

Who would have thought that eating kueh helps in beautifying skin?  This purple sweet potato layered cake added with Etblisse Emil a2, which contains Chinese Purple Yam, also known as ‘Purple Ginseng’, is able to keep your skin hydrated and regulate hormonal level. Comes with smooth and chewy texture, this is a snack you mustn’t miss!


Preparation Time: 15 minutes
Cooking Time: 40 minutes
Yield: 8 servings

(Recipe for 20 x 20cm square mould)

Purple layer
80g Biogreen O’Blue Organic Agave Nectar

220ml warm water
200g coconut milk
6 tablespoons Etblisse Earth-Friendly Milk Emil a2
160g tapioca flour
40g glutinous rice flour 

White layer
60g Biogreen O’Blue Organic Agave Nectar 80g warm water

2 tablespoons Biogreen O’Soy Plus Organic Soya Milk Powder (Low Cane Sugar)
130g coconut milk
120g tapioca flour
1 tablespoon Biogreen 100% Organic Virgin Coconut Oil

Preparation Method:-
1. Stir in agave nectar and coconut milk in water and mix well.
2. For purple batter, add in Etblisse Emil a2, tapioca flour and glutinous rice flour into the prepared mixture in step 1 and mix well.
3. For white batter, repeat step 1 and add in soya milk powder, and tapioca flour and mix well.
4. Grease the mould or container with coconut oil.
5. Pour one full ladle purple batter into the mould and steam for 5 minutes. Set aside to cool for 5 minutes before pouring in the white batter.
6. Pour one full ladle white batter into the mould and steam for 5 minutes. Set aside to cool for 5 minutes before repeating step 5.
7. Repeat steps 5 and 6 for 2 times.
8. Repeat step 5 and steam for another 15 minutes (total 20 minutes).
9. Turn off the heat and remove the mould from the steamer, set aside to cool for 5 minutes before removing the layered cake from the mould.
10. Cut the layered cake into 5cm x 5cm size or as preferred.
