Purple Star Pomegranate Parfait

Parfait is a frozen dessert typically made by layering parfait cream, ice cream and flavoured gelatin in a tall, clear glass, and topped with whipped cream, nuts, granola, and fresh or canned fruit. Try making this fun recipe on your own!

 

Preparation Time: 25 minutes
Cooking Time: 5 minutes
Yield: 2 servings

Ingredients:-
For the granola cereals
½ cup Etblisse Purple Star Crunch
For the parfaits
150ml purified water
2 tablespoons Biogreen Bio-Enzymes Vinegar
4 tablespoons Biogreen O’Soy Plus Organic Soya Milk (Low Cane Sugar)

For the pomegranate compote:
1 teaspoon Biogreen O’Blue Organic Agave Nectar
1 teaspoon cornstarch
½ cup pomegranate seeds
2 tablespoons lemon juice

Preparation Method:-
1. Prepare the yoghurt by mixing the ingredients and set aside for 15 minutes to thicken.
2. Mix agave nectar with cornstarch in a small saucepan. Stir in pomegranate seeds and lemon juice.
3. Bring to a boil over low heat and cook, stirring until syrupy about 5 minutes. Leave aside to cool.
4. To assemble, portion out yogurt mixture into 2 parfait cups and top with Purple Star Crunch.
5. Top each of them evenly with pomegranate compote. Ready to serve.
