Potato Curry with Tomatoes and Snow Peas

If you love a good curry, then you are going to love this vegan potato curry with tomatoes and snow peas! It is filling, creamy and packed with aromatic flavours. It is a perfect recipe for a hearty lunch or dinner!

Yield: 4 Servings 

• 4 potatoes, peeled and cubed
• 2 tomatoes, cubed
• 20g snow peas
• 1 onion, finely chopped
• 3 garlic cloves, finely chopped
• 4 tablespoons vegetarian curry powder
• 3 tablespoons Biogreen O’ Kid High Protein Organic Soya Milk Powder
• 2 tablespoons Biogreen O’Kid Oatmilk
• 2 tablespoons Etblisse Organic Coconut Sugar
• 250ml purified water
• 4 tablespoons Biogreen 100% Organic Virgin Coconut Oil
• 1 teaspoon Biogreen 84 Live Fine Sea Salt  

Preparation Method:
1. Heat coconut oil over medium heat in a saucepan.
2. Toss in onion and garlic, sautéing until fragrant.
3. Add in the curry powder, stir and cook for about 2 minutes, until fragrant.
4. Add the potatoes and water, mix well and cook for 15 minutes.
5. Add the tomatoes, snow peas, coconut sugar and sea salt, continue to cook for another 5 minutes.
6. Add in soya milk powder and oatmilk, stir to combine. Ready to serve.
