The Mid-Autumn Festival is around the corner, there must be some beautiful and delicious mooncakes! Don’t miss out this high-fiber, high-iron and low-sugar Sakura Black Jade mooncake! Make every bite full of nutrition and happiness, and make life more meaningful!

Instructions:

For dough

  1. Mix coconut oil, raw honey and beetroot paste in a large bowl.
  2. Sift in the flour, add in etblisse Hi-Fibre Grains+ with Beetroot and stir thoroughly.
  3. Knead into dough and let it sit aside.
  4. Preheat oven to 120°C.
  5. Cut the dough into evenly sized rounds, approximately 23g for each portion.
  6. Roll each portion into a ball shape. Cover a dough portion with a plastic film and roll into thin disc. 

For the filling

  1. Add the mung beans into boiling water; boil until tender, about 30 minutes.
  2. Blend the cooked mung beans into fine paste.
  3. Mix the black sesame powder, etblisse Hi-Fibre Grains+ with Beetroot, coconut oil and raw honey with the mung bean paste.
  4. Roll and shape into small balls, approximately 27g each portion.
  5. Wrap and seal the filling balls with the dough disc. Transfer the stuffed mooncake onto a lined baking tray.
  6. Bake in the preheated oven for about 8 minutes.
  7. Remove from oven and let cool on a wire rack and store in an air-tight container.

面团

  1. 一个大碗里,将椰子油、蜂蜜与甜菜根糊混合均匀。
  2. 将面粉筛入,再加入etblisse甜菜根轻盈谷纤饮, 并搅拌均匀。
  3. 把以上的材料揉和成面团,让其静置。
  4. 将烤箱预热120摄氏度。
  5. 将面团分成大小均匀的小团子,每个大约23克。
  6. 把每一个小团子揉成球形状,盖上薄膜后再压成小圆饼。 

馅料

  1. 将绿豆放入沸水煮至酥烂(约30分钟),再搅拌成细腻的泥状。
  2. 把黑芝麻粉、etblisse甜菜根轻盈谷纤饮、椰子油、蜂蜜与绿豆泥搅拌均匀。
  3. 混和捏成小团子,每个约27克。
  4. 将芝麻绿豆球裹进面团饼里。
  5. 把面团放进月饼模中,轻轻按住摸具的柄往下按,然后从模具取出月饼并转移至烘烤盘。
  6. 把月饼放入预热好的烤箱中,烤约8分钟。
  7. 将托盘从烤箱中取出,放在晾架上直至完全冷却,并储存在一个密封的容器里。
