Hakka Yam Abacus


Hakka Yam Abacus is a traditional Hakka dish made with yam that is usually eaten during festivals because signifies wealth. Here's a step by step recipe.

Cooking time: 25 minutes

Ingredients:
• 200g taro (yam), peeled and cut into chunks
• 3 scoops Etblisse Emil 3H Oat Bran Milk
• 50g tapioca flour
• 750ml purified water
• 50g Biogreen Organic Dried Flower Mushrooms, soaked and diced
• 25g black fungus, soaked and shredded
• 50g carrot, peeled and diced
• 5cm long ginger, thinly chopped
• 2 cloves garlic, chopped
• ½ teaspoon Biogreen 84 Live Fine Sea Salt
• 1 teaspoon Etblisse Organic Coconut Sugar
• ½ teaspoon sesame oil
• 2 tablespoons Biogreen 100% Organic Virgin Coconut Oil
• Black pepper, to taste
• Fresh coriander leaves (optional), to garnish

Preparation Method:
1. Arrange the yam on a plate and steam under high heat for 10-15 minutes or until soften. Mash the yam in a bowl with a fork.
2. Add Emil 3H, tapioca flour, salt and sugar and mix well to form dough. Knead until the dough becomes non-sticky.
3. Divide the dough into small pieces and roll each into a ball. Shape them into abacus beads by using the thumb and finger to make a slight indentation in the centre of each ball.
4. Bring 750ml of water to boil in a pot. Add the yam balls and cook them in boiling water until it floats on the surface. Remove from the pot and rinse under cool water for a while. Drain well, mix with a little oil. Set aside.
5. Heat coconut oil in a wok. Add the ginger and stir fry until golden brown.
6. Add the carrot, mushrooms, black fungus and stir-fry briskly until fragrance. Season with salt, pepper and sesame oil and light soy sauce.
7. Add the yam balls together and stir fry for 1-2 minutes. Transfer to a serving dish and garnish with coriander leaves.
