• 2 medium-sized potatoes (with skin)

Vegetables Kabobs
• 2 medium-sized potatoes (with skin)
• 2 cups Biogreen flower mushroom
• 1 binjal (cut into chunks)
• 1 carrot (cut into chunks)
• 1 red onion (cut into chunks)
• 1 cup cherry tomatoes
• 1 zucchini (sliced into thick rounds)
• 1 6 ounces firm tofu
• 1 tablespoon Biogreen 100% Organic Virgin Coconut Oil
• 2 tablespoon Biogreen PreBalance Powder
• 1 teaspoon Biogreen G Seasoning Powder
• 1 tablespoon Biogreen Raw Honey
Vegan Kabob Sauce
• 400g tomato puree
• 3 tablespoons Biogreen O’Blue Organic Agave Nectar
• 1/2 tablespoon Biogreen Organic Blackstrap Molasses
• 2 tablespoons Biogreen Bio-Enzymes Vinegar
Cranberry Apple Chutney
• 1 cup water
• 1/4 cup brown sugar
• 350g Biogreen Wisconsin Cranberry
• 1 cup apples (peeled, cored and diced)
• 1 teaspoon ground cinnamon
• 2 tablespoons Biogreen Bio-Enzymes Vinegar
Potato Salad
2 medium-sized potatoes (with skin)
1 tablespoon Biogreen Wisconsin Cranberry
1 tablespoon Biogreen PreBalance Powder
1 cup vegan mayonnaise
Vegan Mayonnaise
• 1 tablespoon Biogreen O’Kid High Protein Organic Soya Milk Powder
• 1 cup Biogreen Organic Extra Virgin Golden Flax Seed Oil
• 1 tablespoon Biogreen2u OxyLemon Enzymes
• ¾ teaspoon Biogreen New Zealand Organic Ocean Balance Sea Salt
• ½ teaspoon Biogreen O’Blue Organic Agave Nectar
• 1 table spoon dill
Preparation method:-
Baked Potatoes
1. Heat oven to 230ºC. Dissolve 2 tablespoons sea salt in 1/2 cup water in large bowl. Place potatoes in bowl and toss so exteriors of potatoes are evenly moistened.
2. Transfer potatoes to the oven, heat for 45 minutes to 1 hour.
3. Remove potatoes from oven and brush tops and sides with oil. Return potatoes to oven and continue to bake for 10 minutes.
4. Remove potatoes from oven and, using paring knife, make 2 slits, forming X, in each potato. Using clean dish towel, hold ends and squeeze slightly to push flesh up and out. Season with sea salt, PreBalance powder and pepper to taste. Serve immediately.
Vegetable Kabobs
1. Heat oven to 190ºC.
2. Combine melted vegan butter and all remaining ingredients in bowl. Add vegetables; toss lightly.
3. Spread into single layer on prepared baking sheet. Bake 20-30 minutes or until vegetables are browned and tender. Serve immediately.
Vegan Kabob Sauce
1. Combine all the ingredients in a mixing bowl and whisk together.
Cranberry Apple Chutney
1. In a medium saucepan combine the water and sugar. Bring mixture to a boil over medium heat.
2. Add all the ingredients and bring to a boil, then simmer gently for 10 minutes stirring often.
3. Pour mixture into a mixing bowl. Place plastic wrap directly on the surface of the sauce.
4. Cool to room temperature and serve or cover and refrigerate. Bring chutney to room temperature before serving.
Potato Salad
1. In a large pot, cover the potatoes with cold water, add 1 teaspoon of salt and bring to a boil over high heat. Turn down to a simmer and cook until tender, about 10 minutes. Do not overcook.
2. In a small bowl, combine the vegan mayo, ¼ teaspoon sea salt, and black pepper. Add the dressing to the potatoes while they're still warm. Mix with a fork, mashing slightly to thicken the dressing.
3. Cool the potatoes and dressing in your fridge or freezer until they are room temperature or cooler.
4. Gently mix in all the remaining ingredients. Taste and adjust the seasoning.
5. Refrigerate for at least 1 hour before serving.
Vegan Mayonnaise
1. Combine all the ingredients in a mixing bowl and whisk together.
