Cauliflower Dry Curry Noodles

Easy no-fuss one pot curry noodles that stimulates the taste bud and satisfy the appetite with its bursting flavours, ready to serve in just 40 minutes!

Yield:  4 servings

• 1 medium cauliflower head, cut into florets
• 1 tablespoon Biogreen 100% Organic Virgin Coconut Oil
• 2 medium white onions, chopped
• 3 cloves garlic, minced
• 1 teaspoon cumin powder
• ¼ teaspoon ground coriander
• 4 teaspoons curry powder
• 400g tomatoes, diced
• 300g green peas
• 4 tablespoons Biogreen O’Kid High Protein Organic Soya Milk Powder + 400ml purified water
• Biogreen 84 Live Fine Sea Salt, to taste
• Black pepper, to taste
• 4 pieces Etblisse Spring Green Noodles

Preparation Method:
1. Steam the cauliflower in a steamer over high heat for 6-8 minutes until tender. Set aside.
2. Cook the noodles in boiled water for 3-5 minutes until tender. Set aside.
3. Heat oil in a pot over medium heat.
4. Stir in onion and garlic, sauté until onion become translucent.
5. Add in cumin powder, coriander powder and curry powder and stir evenly. 
6. Stir in soya milk slowly, then add in tomatoes and green peas and stir to combine well. Bring to a simmer for 15 minutes.
7. Return cauliflower and noodles to the pot and cook for another 3-5 minutes, season with salt and pepper before serving.

 Using soya milk as a substitute for coconut milk helps in reducing saturated fat content and improving the fat quality of your curry noodles.
