Braised Flower Mushrooms with Cabbage Rolls


The most important Chinese New Year’s Eve reunion dinner for welcoming the Spring is bound to be full of delicious and meaningful dishes on the dining table. This exquisite dish not only nutritious and also complemented happiness and prosperity towards the brand new year!

Cooking Time:  30 minutes
Yield:  5-6 servings
 

Ingredients:
• 1 whole Chinese cabbage
• 100g green amaranth, chopped into small pieces
• 1 carrot, stripped
• 100g Biogreen Organic Flower Mushrooms, soaked
• 20g young ginger skinned, sliced
• 20g spring onion, chopped into small pieces
• 1 tablespoon vegetable oil
• ½ teaspoon Biogreen New Zealand Ocean Balance Sea Salt

Sauce:
• 2 tablespoons vegetarian oyster sauce
• 1 teaspoon Etblisse Organic Ginger Syrup
• ½ teaspoon Biogreen G Seasoning Powder
• ½ teaspoon Biogreen New Zealand Ocean Balance Sea Salt
• 1 tablespoons vegetable oil
• Ground white pepper, to taste
• 1 ½ cup flower mushroom water from soaked mushrooms
• 1 teaspoon corn starch water for thickening sauce
 

Cooking Instructions:

Cabbage roll
1. Put Chinese cabbage,  green amaranth and carrot sticks in boiling water, add in salt and oil then  blanch them. Remove and drain the water, set aside.
2. Flatten the Chinese cabbage, place green amaranth and carrot sticks, and roll it up. Set aside.

Braised Flower Mushroom
1. Soak flower mushrooms in hot water until soften.
2. Drain and retain 1 ½ cups of the mushroom water (from soaked mushrooms) for cooking later.
3. Using a pair of scissors or sharp knife, trim the stems of the mushrooms, set aside.
4. Heat oil in a wok over medium heat, sauté ginger slices and chopped scallion until fragrant.
5. Add in the flower mushrooms and stir fry until fragrant.
6. Mix in the ginger syrup, vegetarian oyster sauce, white pepper, G-seasoning and salt into the retained mushroom water.
7. Then pour in and bring it to boil, then cover and simmer over low heat for 20 minutes.
8. Thicken the sauce with corn starch water.
9. To serve, place the cooked cabbage rolls in a circle on a serving plate and place the braised mushrooms in the centre and serve hot. As always, enjoy!
