Ingredients:
Dough
• 150g All-purpose flour
• 1.5g Biogreen 84 Live Sea Salt
• 3 tablespoons Biogreen 100% Pure Black Sesame Powder
• 85ml purified water
• Corn flour, as needed for dusting
Mushroom & Fungus Topping
• 2 - 3 dried Chinese mushrooms, soaked in hot water (keep for soup base later) and sliced thinly
• 1 piece of black fungus, soaked in hot water and sliced thinly
• 1 tablespoon Biogreen 100% Organic Virgin Coconut Oil
• 1 teaspoon sesame oil
• 2 garlic cloves, minced
• ½ tablespoon Biogreen Organic Blackstrap Molasses
• 1 tablespoon vegan oyster sauce (to taste)
Seaweed with Tofu Skin Topping (Vegan anchovies)
• ½ piece tofu skin, cut into 2 pieces
• ½ piece Nori seaweed, cut into 2 pieces
• 1 tablespoon water
• 1 tablespoon flour
• 1 tablespoon rice flour
Others
• 1 piece of tofu pok, chopped and deep fried
• 50g sweet potato leaves
Soup base
• 1 teaspoon Biogreen G Seasoning Powder
• Mushroom soaked water
• White pepper, to taste
Preparation Method:
Noodles
1. Mix flour, sea salt and black sesame powder in a bowl. Pour in water and stir until dough begins to come together. Knead until fully combined and rest for at least 15 minutes.
2. Roll out using a pasta maker gradually from setting 1 to 5. (If you don’t have a maker, roll out 2mm sheets. Dust sheets with flour. Cut into 5mm stripes.)
Seaweed with Tofu Skin Topping
1. Mix water, flour and rice flour evenly.
2. Spread the mixture on the 2 pieces of tofu skin and 2 pieces of Nori.
3. Put the Nori on the tofu skin, roll up to form a long strip, flatten it.
4. Steam for 10 minutes. Cool the strips before cutting into anchovy’s size.
5. Deep fry until colour turn golden. Dish and set aside.
Mushroom & Fungus Topping
1. Heat oil in a saucepan and sauté minced garlic until fragrant.
2. Add in mushroom and fungus strips; follow by molasses and vegan oyster sauce.
3. Leave to simmer for 5-10 minutes until soften. Dish and set aside.
To assembly
1. Add water and seasoning powder, and then bring to a boil.
2. Cook noodles and sweet potato leaves in the broth.
3. Dish out and garnish generously with the topping. Serve immediately.
