Ingredients:-
For the mochi
• 2 cups glutinous rice flour
• 360ml purified water
• 2 tablespoons sunflower oil
For the black bean soup
• 1000ml purified water
• 125g Biogreen O’Tigres Organic Black Bean Powder (Cane Sugar Free)
• 20g red dates
For the peanut topping
• ¼ cup roasted peanuts, crushed
• 1 tablespoon Etblisse Organic Unrefined Coconut Sugar
• 1 tablespoon cornstarch
For the black sesame topping
• ¼ cup Biogreen 100% Pure Black Sesame Powder
• 1 tablespoon Etblisse Organic Unrefined Coconut Sugar
• 1 tablespoon cornstarch
Preparation Method:-
1. Prepare the toppings by mixing all the ingredients together.
2. In a bowl, add in glutinous rice flour, water and sunflower oil. Stir until smooth.
3. Bring a pot of water to a boil, or prepare a steamer and steam the bowl of mochi covered for 15 minutes.
4. After 15 minutes, mix with a plastic rice paddle to prevent sticking, then re-cover and steam for another 5 minutes or until done.
5. Cut the mochi into pieces and coat with peanut or black sesame toppings.
6. Prepare the black bean soup by mixing black bean powder with water. Add in red dates and bring to a boil. Simmer for 30 minutes and remove from heat.
7. Serve the mochi along with hot black bean soup.
